Directions For Cooking
Pan
Preheat oven to 450 degrees
Butter sheet pan
Lightly flour dough ball. Use rolling pin or strech with hands to size of pan
Place stretched dough in pan, stretch to edge of pan if necessary
Spread sauce evenly
Cover with cheese and topping
Bake 14 minutes. Turn. Bake 6-8 minutes or until desired cook
Cool, Cut, and Enjoy!
Cast Iron
A cast iron pan works well but will take more baking time
Stone
Preheat oven to 450 degrees
Lightly flour dough ball. Use rolling pin or stretch by hand
If stretching by hand be careful not to make the middle of the pie very thin or thicker than the crust
Lightly flour pizza peel or wood cutting board
Sauce crust (be sure to leave ¼” crust showing)
Add cheese and topping
Lightly shake board back and forth, the pizza should move freely from the light flour underneath
The topping process needs to be fairly quick or moisture will stick the dough to the board. With a slight 45 degree angle shake the pizza onto the back of the pizza stone
Slowly shake the rest of the pie onto the pizza stone
Bake 10 minutes. Turn. Bake 3-6 more minutes or until desired bake
Add Pie Guy Spice, Cool, Cut, Enjoy!
*If you do not have a pizza peel or wooden cutting board, stretch the dough like above. Before adding any sauce or toppings par bake the dough on the preheated pizza stone for 30 seconds to 60 seconds, pop any bubbles.
Take the dough out, add sauce, cheese, and toppings. Place back on stone
Cook 8 minutes. Turn. Cook 4-6 more minutes or until desired bake
Add Pie Guy Spice, Cool, Cut, Enjoy!
Garlic Knots
Directions for make n bake
Pre heat oven to 425
Lightly oil baking sheet
Without the use of flour press dough into even square shape ( ¼’ - ½’ thick)
Use a pizza cutter to cut ¼’ - ½’ strips
Tie strips into small knots. 2-3 knots per strip
Place on baking pan with some space in between knots
Bake until golden brown (about 12 minutes)
Place hot knots in bowl, toss with garlic butter, add a pinch of salt
Once knots are coated with butter toss in pecorino cheese
Serve with red sauce. Enjoy!
CALZONES
Pre heat oven to 450
If you have a stone, pre heat it too. If knot, use a flat cookie tray and lightly butter or oil it.
Lightly flour entire dough ball.
Use your hands to “pat” or use a roller to achieve about a 8” diameter circle. Make an imaginary line thru the center of the dough.
Place ricotta cheese blend in the middle of that line on the side closest to you.
Use mozzarella to spread the ricotta over surface (you will need atleast 1” of dough free of toppings to pinch the crust down.
Apply preferred amount of cheese, and topping.
Fold the back side of the dough over the toppings and line up with the front edge of bottom dough.
Press along seam to seal.
Cut off excess dough (make a few knots).
Poke a 1” slit in the tip of the zone for steam to release.
Place zone on pizza stone or sheet. Bake 15 minutes. Turn. Bake 5-8 more minutes or until golden brown.
When finished, cool for 5 minutes.
Cut open and enjoy!
